Chick-Peas and Artichokes Au Gratin
-14 oz can of Chickpeas, drained
-14 oz can of black-eyed peas, drained
-41/2 oz jar of artichoke hearts in olive oil
-1 red bell pepper, seeded and chopped
-1 garlic clove, crushed
-1 Tablesppon of Chopped fresh parsley
-1 teaspoon lemon juice
-2/3 cup of sour cream (use more if you want)
-1 egg yolk
-½ cup of shredded cheddar cheese
-Salt and pepper
Directions: Pre-heat oven to 350 degrees
mix together: Chickpeas, blackeyed peas, artichoke and red bell pepper
stir in a little of the artichoke oil, just enough to moisten the mixture
stir in the garlic, parsley, lemon juice and s and p
mix together: sour cream, egg yolk, cheese and more seasoningspoon mixture over veggies and bake 25-30 minutes until golden
